Greek Yogurt Nutella Banana Bread
- 2 VERY ripe bananas (I’m talking brown freckles)
- 1/8 cup softened butter
- 1/4 cup oil (vegetable oil or canola oil)
- 1 cup greek yogurt
- 2 eggs
- 2 tsp vanilla
- 1/2 cup white sugar
- 2 tsp baking soda
- 1 3/4 cup flour
- 3/4 cup chopped walnuts (optional)
- 1/4 cup Nutella (after all ingredients are combined and poured into pan)
- Preheat oven to 350 degrees and spray your pan(s) with PAM
- Have your beautiful and amazing sous chef (your KitchenAid mixer) mix all ingredients in one bowl – banana bread is easy like that. **Normally when baking, you need to mix dry ingredients and wet (fats, eggs & sugars) separately or it looks like a lumpy pile of shit)
- Be sure to have your sous-chef mash up the bananas all the way
- Pour the mixture into 2 loaf pans (or a large 9″ round pan like I have pictured if you don’t have two). **Baked goods rise so never fill a muffin tin, loaf pan or round dish all the way to the brim, it’ll rise and spill oven into your oven. And make your smoke detectors go off and your dog howl. For real.)
- “Cut in” Nutella with the edge of knife and drag the clumps around the surface of the dough, making a nifty design.
- Bake for approximately 25-30 minutes or until bread has risen and has hints of golden brown on the surface. Stick a fork in the middle and make sure that it comes out clean. Or if you’re really hungry and it’s slightly under-baked, just eat it anyway.
